Sweet & Sour chicken recipe w/ pictures :)

Ok here is the recipe...I am going to paste the ingredients here form a previous post and then add directions and pictures after:

3 Chicken breast:  Sometimes we used the frozen breast you get in a bag...and sometimes we use fresh. doesn't really matter.

3 T of minced garlic...we used the stuff you can buy in the jar

1 C diced onion.  For fast we use the frozen chopped you can get at walmart in the frozen veggie isle

3 chicken bullion cubes..whatever brand you want

Peppers: 
One yellow, orange,a and green or you can use a red one in place of one of the others also.  We use three whole peppers total.

1 small can of pineapple tidbits drained...we save the juice and use for other dishes like the burbon chicken.

soy sauce 
you can use lite or reg...not using much in this dish at all

1 bottle ofkraft sweet and sour sauce...this is the bestwe have tried so far and we have tried many different ones.  It does make a huge difference when you use different sauces.  We find this at walmart..it's in a plastic bottle with blue label

Back pepper to taste

White jasmine rice:  we use our rice cooker (life saver) when making our rice...it's done to perfection every time and we purchased it at walmart for only 20 some bucks!  We use it all the time! 


THIS IS ALL THE INGREDIENTS USED

First I have to tell you that we use a HUGE non stick pan to make this in.  It is a 14 inch pan and is way bigger then our stove top but it works great.

Pan goes on Med heat:

First you add chicken frozen or fresh..to the pan (I used fresh today cuz it's all i had) If your worried about burning you can add a touch of olive oil to the pan..frozen you don't need to..it makes lots of fluid on its own.  You may need to with fresh though...I did this time.

Add Garlic and onions and 3 bullion cubes to the chicken: Ya i know it looks like more then 3 breasts but these are small and cut thinner then the normal breast we used.


While this is cooking (10 min or so) start cleaning and cutting up your peppers. I used 4 today because they were smaller...usually i use three Green, red, and green...already have yellow color with pineapple :) and we like color in our food.



Cut them in 1 inch pieces




Flip over your chicken after simmering for 10 min or so: No need to stir anything at this time...heat is still on med.




Start your rice at this time.



See the cup in the rice...this comes with the cooker and its about 1/2 cup or so.  You add 5 of these (we make 5) and then you will see the numbers on the side of the inside bowl...you add water to where it reads 5...that simple...plug in, put cover on and let cook!  Make sure you turn the switch to cook!  I forgot the first few times we used it and wondered why our rice was not getting done!





Get the rest of your ingredients out and ready to use:  I have the large can of tidbits here but only use 1/2 of them.  We make this dish almost every week so I store the other 1/2 in fridge.



Remove your chicken and put in cutting board after 10 min of simmering on the other side let cool a bit before cutting it in cube size pieces.  If chicken is not all the way done that's ok...it goes back in for more simmering and will finish in the pan.



Add your cut peppers,pineapple, and soy sauce (about a T or 2) to the dish and stir...let this simmer while you cut up your chicken.  TIP:  we use an electric knife to cut up our chicken.







Add the chicken back after you cut it up and stir again add some pepper to taste while it's cooking.  Then add your sweet and sour sauce, stir and let this simmer for about 10 - 15 min.  This won't have much juice but you don't need much...it's great like it is :)



This is what the rice looks like after it's done...it's perfect! Not to dry and not to moist

My battery on my camera died right after I took this! lol Just in time...you can tell it's a little lite looking.  If anyone tries this please let me know how you like it :)

OMG that looks simply delicious!  My mouth was watering while reading this entire entry.  I don't exactly have a rice cooker persay, I make mine in our vegetable steamer, but it never seems like enough rice. Now I know I can go to Walmart to get one. That looks like it make plenty at a time.  Thank you for sharing this entry.
